      Cutting and Cooking a Pig from Nose to Tail

      Each Class: $110 includes ample tastings, a glass of Italian wine, Cecchini's famous seasoning "Profumo del Chianti" and a package of his specialty "Tonno del Chianti" (seasoned, slow cooked pork packed in sunflower oil)

      World renowned Tuscan butcher Dario Cecchini descends from a long line of butchers and has recreated an antique-style macelleria on the site of the family shop which was destroyed during the war. He single-handedly strives to preserve centuries old recipes and defend Bistecca Fiorentina from the unnecessary attacks of the European Union. His shop is a tourist attraction as well as a place to buy unusual cuts of fresh and prepared meats.

      Dario works with the University of Florence to preserve many of the traditional foods that are endangered species. He unites farmers and restaurant owners to continue producing and serving local products.

      Riccardo Ricci, Dario's right hand man and the first non-Cecchini to cut meat in the store in 250 years! is coming to Sebastopol. He speaks only Italian, and has years of experience with "The Butcher of Tuscany". Meno Male, we will have the benefit of Chris Arentz, chef and former intern with Riccardo, to translate for us.

      More information is coming to me each week - today I learned that one of the things that Riccardo will be making is what Dario lovingly calls: "Tonno del Chianti" (Chianti Tuna), which is MUCH better than it sounds: pork - spiced, massaged, marinated and slow cooked for about 3 hours, and then packaged in sunflower oil. Amazing on a sandwich!
