      Regional Spanish Cooking: Catalan Fideuá!

      With Chef Laura Casasayas-Pala Catalan cuisine comes from the state of Catalonia in Spain, where they celebrate the Mediterranian diet, using ingredients like vegetables, fish, olives, olive oil, spices and legumes.  In this class Laura will teach you how to make classic recipes served in la Boqueria, a market located in las Ramblas Barcelona. La Boqueria is the most popular market in Europa and considered one of the best food markets in the world. We will explore classic Catalan dishes like: Gazpacho soup, Fideuá, (similar to paella but with noodles) and Poached Pears for dessert, all paired with Spanish wine! Fideuá is a dish that originated in Valencia, and was adopted by Catalonia culture, now one of the most popular dishes and ordered by tourists and locals. Like Paella, fideuá was created by Valencian fishermen by using the seafood scraps that they had not been able to sell in the markets during the day. About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.
