      Let your inner nerd out while our Somm, Matt, guides you through a tasting of 6 wines highlighting the science behind the drink. All of our classes are a free-flowing (excuse the pun) discussion and are suitable for novice and oenophile alike. UPCOMING TOPICS January: "The Chemistry of Flavor" Your glass of wine is 98% water and alcohol, but that last 2% is where all the intrigue is. Several thousand different chemicals combine to make all the complexities. February: "Winemaking Techniques" The modern winemaker is part artist, part chemist, and part chef. From oak ageing, to temperature controlled extended maceration, learn about the different techniques in their arsenal to turn grape juice into a masterpiece. March: "Waiter, There's 'Bugs' In My wine!!" Louis Pastuer discoverd the world of microscopic life by studying wine and beer. Learn all about the "bugs" that make your favorite beverages. April: "The Mystery of Terrior" We know that where a wine came from affect's its taste. Why is that? Is it local style? Climate? Soil? Come join us and find out! May: "Wine Genetics - AKA the Grape Family Tree" Nearly all wine we drink is made from one species of grape. From there, we get thousands of varietals. This month we'll discuss several of the most famous grape families June: "Ageing Wine" Just like us, wines change as they get older. (some get better, some...not so much) So what exactly is happening, and how can you, the consumer know when to age a wine, and when to drink it. Learn this and more, and taste some of the "elder statesmen" in our cellar. Tasting - $20.00
