      Masque’s Spring Menu

      With the new spring menu at Masque, Chef Prateek and his team have employed a number of time-tested Indian preservation techniques of fermenting and pickling. As we transition into summer, we’re able to give some of winter’s highlights longevity, rather than let the late harvest go to waste.

      Winter strawberries from our farm, pickled for a month, now feature in a light, whipped sauce alongside almond milk ice cream. Fermented bananas feature three ways, the result of a happy accident turned tangy dessert. Other highlights also include a selection of pastrami – buff tongue for the non-veg, salsify for the veg – cured in house, and a finely layered plate of king oyster mushrooms and duck liver sitting in a chickpea miso sourced from Allahabad.

      Our obsession with seasonal produce only grows, but we’re keen to explore how some of these old techniques can add a new dimension to our menus.
