      Our most beloved foods and drink are fermented: chocolate, sourdough bread, cheese, wine, miso, kombucha, and so on . . .  Come learn how to cultivate your own alchemical allies to help you transform simple ingredients into delicious, nutritious, and gut-friendly fermented foods. In this three-hour participation class, you will learn the following: The science and benefits of lacto-fermentation How to make lacto-fermented banana hot sauce How to make preserved garlic How to identify local wild greens and herbs to make a wild greens sauerkraut What is the chayote fruit? We will make dill pickles using this perennial plant. More crunch than a cucumber! Also in this class, we will enjoy savory banana hot sauce, wild greens sauerkraut, chayote dill pickles with Sun Dog bread. And we'll also serve some of our special home-fermented fruit-infused water kefir as a refreshing and bubbly treat. Students will take home all these great items: 1 jar of sweet and savory lacto-fermented local banana hot sauce 1 jar preserved garlic 1 jar wild green sauerkraut 1 jar chayote dill pickles Recipes and "how to" instructions on lacto-fermenting foods safely and successfully About the Chefs: Sarah Montano and Aaron Sternberg share a passion for food that is good for the earth and good for the people. Sarah worked as a chef and organic gardener at a farm and retreat center here on the Big Island, and she specializes in farm-to-table cooking. Aaron is a lifelong environmental advocate and adventure guide on the island, with a focus on eco-sensitive food systems. Sarah's and Aaron's goal is to curate experiences that inspire the reality that all people deserve the opportunity to access safe and healthy food without having to rely on the industrial and commercial conventional food systems. They strive to provide the tools and support that people need to work their way into food sovereignty and will seek to connect local people and communities to local food movements. Together, they have lived and worked on organic farms throughout Costa Rica and the United States where food preservation plays a key role in living sustainably. Sarah and Aaron love to grow food, forage for wild food, and gather together with friends for delicious meals that represent our vibrant local ingredients. In the rare event that an instructor needs to cancel last minute, students will receive a full refund. We do not otherwise offer cash refunds. Do I need to print my ticket?No, you do not need to print your ticket. Is alcohol available/provided?Due to state liquor laws, we are unable to provide alcohol. What if I have dietary restrictions?Please contact us in advance with any dietary restrictions. The recipes that will be used are developed using common cooking and baking ingredients that may or may not be specified in the menu titles, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc. If you have a food allergy, please check with The Spoon Shop Kona before registering for the class. Adjustments to recipes cannot be made during class. We will share your dietary needs with our teachers and do our best to accommodate your requests. However, the curriculum for some classes cannot be revised in order to provide the best experience for the entire group.
