      Italian cooking class: Fresh Pasta, Pesto and 2 Sauces

      Pasta is easy to make, incredibily satisfying and it definetly suits a Sunday class! With only two ingredients let's mix the perfect dough, roll it by hand or by machine, cut tagliatelle,  pappardelle, and fettuccine; add herbs or colour with pureed spinach for a traditional 'Paglia e Fieno'. With Water based pasta (typical of the South of Italy) experiment shaping orecchiette, trofie and definetly fusilli, my favourites! While the dough rests and the pasta dries, we will prepare two sauces and one fresh spinach pesto...then enjoy the lunch together. We take pride in only using the best and local ingredients : Pasta Flour from Wessex Mill in Wantage and free range organic eggs from Willowbrook Farm or Mayfield in Witney £ 60.00 per person.
