Knife Skills 101 (Knife Skills 101)

Nothing is more vital to cooking mastery than knife skills - unless it’s possessing good knives themselves! Join Betty in this hands-on class and you’ll learn about knife construction, proper techniques for cutting and how to slice, dice, julienne and chiffonade, as well as how to segment citrus and concasse’ a tomato. We’ll then apply these newly learned skills and create several recipes using these techniques. Some of the recipes we’ll create include: Vegetable Spring Rolls; Mixed Lettuce Salad with Gorgonzola-Herb Dressing; Scallops with Cilantro Sauce and Asian Slaw; Caponata; Sesame Greens and Citrus Salad with Gingered Yogurt. Recipes may contain dairy, seafood and/or wheat.
